Many folks don’t realize the myriad of responsibilities that our health department has to protect the health and safety of our residents. One of these responsibilities involves our response to vehicle accidents involving food commodities that happen in Webster County. We responded to one such event early Sunday morning involving over 20 tons of cheese products. The Health Unit is vested with the responsibility of determining if the commodity is safe to release back into the food supply chain or not. If it is safe, then we ensure that it is stored securely until it can be back on the road on its way to consumers. Sometimes, however, as was the case on Sunday morning, the entire load must be disposed of. The damage to this trailer was such that all of the cheese inside was adulterated, leaving it unsafe for consumption.
